Made with Love: 3 Chocolate Desserts for Your ValentineNothing says Valentine’s Day like chocolate. This year, instead of a generic box of bonbons, treat your sweetheart to a special dessert made with love. Here are three decadent chocolate desserts (ranging from super easy to fancy pants) that you can make at home for your sweetheart this Valentine’s Day.

Chocolate Covered Strawberries

Super easy to make in about 15 minutes, and way better than a box of chocolates. You can go simple with this or dress them up with toppings.

Ingredients
  1. 1 pint fresh strawberries (18-20)
  2. 6 ounces semi-sweet chocolate, chopped or chips
Toppings (optional)
  1. 2 ounces dark or white chocolate, chopped or chips
  2. Sea salt flakes, sprinkles, sanding sugar, chopped pretzels, etc.
Instructions
  1. Line a cookie sheet with waxed or parchment paper. Rinse strawberries and dry completely.
  2. In a double-boiler, gently melt chocolate, stirring frequently. (Alternatively, melt the chocolate in microwave at half power, in 45 second intervals, stirring in between, until melted).
  3. Dip each strawberry in chocolate, letting excess drip off. Place on cookie sheet.
  4. Sprinkle with toppings or melt dark or white chocolate, then drizzle with fork over dipped strawberries.
  5. Set aside or refrigerate strawberries until chocolate is firm (at least 30 minutes).

Ingredients
  1. 2 ounces dark chocolate or semisweet chocolate chips
  2. 4 tablespoons unsalted butter
  3. 1 large egg
  4. 1 large egg yolk
  5. 3 tablespoons granulated sugar
  6. 1/2 teaspoon vanilla extract
  7. 1/2 teaspoon instant espresso powder
  8. pinch of salt
  9. 3 tablespoons all-purpose flour
  10. Vanilla ice cream and fresh berries for serving
Instructions
  1. Preheat oven to 425. Grease 2 small ramekins very well, or coat with cooking spray.
  2. In a double boiler, melt chocolate chips and butter, stirring until smooth and glossy. Alternatively, heat in a small bowl in microwave in 30 second increments until chocolate chips are almost melted, stirring between each increment.
  3. In a medium bowl, combine chocolate-butter mixture with egg, egg yolk, and sugar. Stir or beat with electric beater until light and fluffy. Add vanilla, espresso powder (optional), and salt, stirring to combine.
  4. Gently fold in flour, just until combined. Don’t overmix. Divide batter between two ramekins and place on a small baking sheet.
  5. Bake for 12-14 minutes. Edges should be firm and center still slightly soft, yet no longer wet looking. Allow to sit for 1 minute (no longer – you want these hot), then run a small knife carefully around the edges before inverting onto small plate.
  6. Serve immediately, with fresh berries and a scoop of your favorite vanilla ice cream on the side.

For the Chocolate Mousse
  1. 3.5 ounces semi-sweet chocolate
  2. 2 Tablespoons whole milk
  3. 1/2 teaspoon vanilla extract
  4. 2 Tablespoons toasted blanched hazelnuts, finely chopped
  5. 3/4 cup heavy cream
For the Chocolate Hazelnut Ganache
  1. 1 ounce semi-sweet chocolate, chopped
  2. 2 Tablespoons heavy cream
  3. 1 Tablespoons hazelnut spread, such as Nutella
  4. ¼ teaspoon dark rum or Frangelico (optional)
Topping
  1. 2 Tablespoons toasted hazelnuts*, coarsely chopped
Instructions
  1. For the Mousse: In a double boiler, melt chocolate, stirring until smooth. Alternatively, heat in a small bowl in microwave in 30 second increments until chocolate is almost melted, stirring between each increment. Stir in vanilla and hazelnuts. Let cool to room temperature.
  2. In a stand mixer or with hand-held mixer, beat heavy cream until soft peaks form. Gently fold 1/3 of whipped cream into the cooled chocolate mixture until combined. Add the rest of the whipped cream and fold until combined and uniform. Divide into 2 small serving cups or glasses.
  3. For the Ganache: Place chopped chocolate in a small glass bowl. In a small pan, bring cream just to a boil, then pour over chocolate. Let stand for 1 minute then stir together. Add Nutella and rum/Frangelico and stir until smooth and cooled a bit. Add to top of mousse cups and garnish with chopped hazelnuts. Refrigerate for at least 2 hours before serving.
Notes
  1. * Toast hazelnuts in a 350 oven for 5-8 minutes. (Watch them closely so they don’t burn!)
