Quick and Easy Dinner Recipe: Caprese Pasta Salad

Are you short on time when it comes to make dinner?  Busy with those school pick ups, sports practices, homework?… I feel you.  I’m there too!  I have a quick and easy recipe dinner that is sure to be a crowd pleaser.  The best part is, it’s budget friendly and only takes about 20 min to make.  Also, I didn’t measure a single ingredient!  Sound good?

I give you the Caprese Pasta Salad!


I will admit, I took a bit of a short cut and bought some already cooked chicken breasts.  Sometimes I like to take a little extra help from the store on these busy school nights.  These individually wrapped ones from Trader Joes are a favorite of mine.  I also purchased some fresh basil, arugula, mini mozzarella balls (these are amazing, by the way).  On hand, I had an open box of pasta, a lemon and balsamic dressing, oh and the beautiful tomatoes came from my moms garden!



Set your water up to boil, added the pasta and set the timer.  In the meantime I chopped up the chicken breasts and tomatoes.


I also sliced a baguette and poured myself a glass of wine.



This meal is so quick and easy, I even had time to create a mini appetizer (because lets face it, I needed a reason to eat one of those mozzarella balls!)

Slice a baguette, top each piece with a basil leaf, tomato and mozzarella ball and voila!  You have a gorgeous appetizer to serve to your guests… Or just eat yourself while you’re watching your pot of water boil as you sip on your wine and pretend to be super busy.


The ingredients in this meal are so versatile! Are you gluten free?  Just sub the regular pasta for your favorite gluten free version.  Vegetarian?  We got you covered, just omit the chicken, and add tofu or maybe some white beans for a little extra protein.

Ok, back to the recipe.

Once the pasta cooks, drain it, add it to a large bowl.  Throw in your chicken, tomato, basil, arugula, mozzarella and dress with balsamic vinaigrette and a squeeze of fresh lemon, maybe some fresh cracked pepper if you’re feeling fancy!  Serve it up with your sliced bread and don’t forget the wine!
